You must be alive as it dies in order to learn the spell.
If you die before the enemy does you will not learn the spell. Spell chances in the open world or Masked Carnivale are RNG based on the number of stars for that spell. Doing instances either premade with no Unrestricted options selected or with both Unrestricted and Level Sync options make the spell a 100% learn rate.
